Got Bananas?

When you end up with over-ripe bananas, it’s usually time for banana bread. But what if you’re just tired of banana bread? This very situation occurred in our house this afternoon. Making use of Google, I found a cookie recipe that looked good. We tried it, and it’s definitely a keeper! Yeah, there’s a bit of sugar in there. But also some whole grain and fruit, so you can pretend they’re healthy if you want.

Banana Cornmeal Cookies

1 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup butter or margarine — softened
1/2 cup mashed very ripe banana (1 medium)
1 egg
2 1/2 cups all-purpose flour
1 cup yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon

Heat oven to 375º. Grease cookie sheet. Beat brown sugar, 1/2 cup
granulated sugar, the butter, banana and egg in large bowl with
electric mixer on medium speed, or mix with spoon. Stir in flour,
cornmeal, baking powder, salt and 1 teaspoon cinnamon. (If dough is
too soft to shape, cover and refrigerate about 2 hours or until firm.)

Mix 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Shape dough
into 1 1/4-inch balls. Place about 3 inches apart on cookie sheet.
Flatten slightly in crisscross pattern with fork dipped into
cinnamon-sugar mixture. Bake 10 to 12 minutes or until light brown.
Immediately remove from cookie sheet to wire rack.

RUNNING HOME

My blog. Herein read entries related to who and what is important to me. Feel free to leave comments. I feel free to delete them if I don't like them. So there. By reading about my life, readers should expect to begin to see their own lives as increasingly more organized and sophisticated, their homes cleaner and neater.

Why This Blog?

Well, mostly this is for my family to see pictures and read anecdotes about the kids. It's also a venue for telling the story of my struggles and victories in my life as a Christian, a wife, a mother, and a teacher. Occasionally I toss in some weird or touching item that I've found.

What’s Christianity All About?

The Gospel is the news that Jesus Christ, the Righteous One, died for our sins and rose again, eternally triumphant over all his enemies, so that there is now no condemnation for those who believe, but only everlasting joy. [as said by John Piper]
